Preparing Hainanese Chicken Rice

You love Hainanese Chicken Rice but unfortunately you do not know how to make it. You only consider take out or eating out whenever you want to eat Hainanese Chicken Rice. The good news is that you can cook this classic in your house. You only need to be guided with a cooking book. If you do not have a cook book, you can simply ask your mother or elders how to cook this.

If you cannot find a cook book and your mother or elder does not know how to cook Hainanese Chicken, worry no more because you can refer here. Hainanese Chicken Rice is a loved dish not only by Singaporeans but all people. In fact, this is the national dish of Singapore. Fortunately you do not need to be an expert to cook this. Here are the things that you can consider when you prepare Hainanese Chicken Rice:

Hainanese Chicken Rice is commendable because of its various yet balanced tastes. There are many ingredients that you need to gather. You need 1 kg chicken legs or wings, 3 slices of ginger and 2 pieces of spring onions for the stock. For the chicken, you should purchase 1.5 kg of free range chicken, 1 tbsp Shaoxing, 2 tbsp soy sauce, 1 piece garlic cloves, 6 slices of ginger, 2 pieces onions, 1 tsp sesame oil and ½ tsp salt. For the ginger sauce, you need 75 g ginger, 6 pieces garlic cloves, ½ tbsp lime juice and ½ tbsp salt. For the chilli sauce, you need 1 ½ tbsp lime juice, 1 tbsp salt, 1 or 2 pieces garlic cloves and  10 pieces long (red) chillies. For the rice, you need 2 pieces pandan leaves, grated ginger, 4 pieces garlic cloves, 3 cups of rice and 2 tsp of salt.

The first thing that you need to do is rub the insides of the chicken with a paste (made of ginger, onion, garlic, soy sauce and rice wine). The secret to making the chicken tender and juicy is soak it in the water without turning the heat or boiling. When you put the chicken, make sure that it is boiling but you turned the heat off. Remove the chicken after an hour. It is time to make a stock. Just add chicken legs or wings, onions and ginger to the pot and wait for it to boil. For the ginger and chilli sauce, you only need to mix it. For the chicken rice, you need the stock. When the rice is cooked, it is ready to serve. You should serve the remaining stock along with the rice, chicken, chilli sauce and chilli soup. Some add cucumber and kecap manis.
